Mexican watermelon salad

Salted watermelon seasoned with chilli is a popular street snack in Mexico. The watermelon is seasoned with a product called Tajín made of chilli, lime and salt. This recipe adapted from Great British Chefs turns the idea into an unusual summer salad.

Ingredients

  • For the salad:
  • 50g blanched almonds, lightly toasted in a skillet and crushed
  • Quarter of a cucumber, diced
  • Half a 1 watermelon, cut into chunks
  • Half a handful fresh mint leaves, roughly chopped
  • Maldon sea salt flakes
  • Pinch of chilli powder
  • Pinch of chilli flakes
  • For the dressing:
  • 1 tbsp lime juice
  • 45ml extra virgin olive oil
  • Pinch of salt
  • Pinch of caster sugar

Instructions

To make the dressing:

Shake all the ingredients together in a jar

To prepare the salad:

Season the watermelon with the salt and chilli powder.

Arrange the watermelon on a plate with the cucumber and mink. Sprinkle over the almonds and chilli flakes.

Drizzle with the dressing.
