If you are cooking up a barbecue on this glorious May Bank Holiday Monday, then you want to be focussing on your grilled meats. You don’t want to be fussing over sides. These potatoes are based on pommes d’terre Parmentier, but are even more rough and ready, and ideal to accompany a summer barbecue.
Potatoes for barbecue
Ingredients
- 4 good-sized potatoes
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 2 sprigs of rosemary, chopped
- Sea salt and freshly ground black pepper
Instructions
Preheat an oven to 220˚C.
Cut the unpeeled potatoes into 1-inch cubes, and put them on a baking tray with plenty of room to move around. Slake them with the oil, add the rosemary and garlic, and season liberally. Then combine all the ingredients turning the potatoes over and over with your hands.
Bake in the oven for 35 minutes, tossing occasionally.
