Cabbage with crispy bacon Ann Marie


Ketogenic, or ‘keto’ diets are considered by many to be a relatively new idea. However, the whole concept, as a low-carbohydrate, high-fat regimen was first introduced in the 1920s as a treatment for epilepsy, particularly in children who did not respond to medication. In the 1970s, the diet ketogenic gained popularity as a weight loss method, but it fell out of favour due to contemporary concerns about its high fat content.

For the next few years, diet fads were focussed on removing monounsaturated fats — margarine supplanted butter, and everything was about eating less fat. We ate a lot of processed crap to achieve this.

Meanwhile, the real demon – carbohydrate – was eaten in huge quantities, and we kept getting fat.

In recent years, the keto diet has regained popularity as a weight loss method and as a potential treatment for various health conditions, including type 2 diabetes and some neurological disorders. The famous Atkin’s Diet, is actually a ketogenic formula.

The dish given today is fully ketogenic, and very, very tasty.

Ingredients

  • 280g bacon, diced
  • 2 cloves of garlic, sliced
  • 2 tbsp butter
  • 1kg green cabbage, shredded
  • 1 tsp apple cider vinegar
  • Sea salt and freshly ground black pepper
  • 1 red chilli, chopped
  • 1 tbsp fresh coriander, chopped

Instructions

Fry the bacon in a dry pan until gilded. Add the garlic and gently for 5 mins.

Add the butter and heat until melted. Add the cabbage and mix through. Add the vinegar and season. Cook on medium for 15 mins until the cabbage is cooked through.

Sprinkle over with the chilli and coriander and serve.
