This simple ‘garden’ salad comes from the kitchen of Italian food writer Ursula Ferrigno, and is in her 2003 vegetarian cook book Truly Italian. As a casual learner of bits of Italian, I was surprised to see the dish names for ‘d’orto‘ rather than ‘il giardino.’ Now, I never did Latin at school, bit I do know that if you learned Latin in a British school, then you will know all about the derivation of ‘d’orto.’ For those of you, I will just leave this here …
Insalata d'orto
Ingredients
- For the salad:
- 2 sticks celery, chopped
- 2 carrots, chopped
- 1 red onion, chopped
- 16 baby plum tomatoes, halved
- Handful parsley, chopped
- Handful fresh mint, chopped
- For the dressing:
- 4 tbsp olive oil
- Squeeze of lemon
- Sea salt and freshly ground black pepper
Instructions
Combine all the chopped ingredients in a bowl. Add the oil and lemon juice, toss and season.
