Escalier

Last month, two friends and I bought The Edge Distillery in Astbury, just south of Congleton in Cheshire. We have been busy making and packaging gin for our customers. It was a welcome boost for our gin to be featured on ITV’s James Martin’s Saturday Morning when Merlin Griffiths (he of Fred Sirieix’s First Dates) made a gin and cider cocktail using our pear gin. The product was given to him by the previous distillery owners way back during the COVID-19 lockdown.

Merlin said that the name ‘Escalier‘ came from the Cockney rhyming slang phrase “Apples and pears,” meaning ‘stairs.’ Hence ‘Escalier.’ The segment featured on Series 8, Episode 34 of the TV show.

At the Edge Distillery, we use the Escailer as the prize for winning the quiz at our popular gin tasting evenings.

Ingredients

  • 50ml The Edge Pear Gin
  • 25ml elderflower cordial
  • 20ml freshly squeezed lemon juice
  • Top with good-quality Normandy or Breton cider

Instructions

Fill a highball with ice. Shake the first three ingredients with ice and strain into the glass. Top wth the cider and garnish with apple and/or pear balls.
