Lassi, (“लस्सी” in Hindi) meaning ‘buttermilk,’ is an Indian sub-continental drink made from yoghurt. It has been around since something like 1,000 BC and has been thought to have pseudoscientific, Ayurvedic healing properties on both the stomach and mind. In actual fact, yoghurt is quite good for settling the stomach, so there may be mileage in this. We have made Salted Lassi and Mango Lassi before. But really, you can make a lassi with any fruit and some sort of spice.
The recipe for Pineapple Lassi on this page is our own and is based on the simple notion that pineapple and ginger are nice together.
Pineapple and Ginger Lassi
Ingredients
- 135g Greek yoghurt
- 70g fresh pineapple
- 20ml simple syrup
- 1 pinkie-sized piece of ginger, chopped
- Couple of ice cubes
Instructions
Blitz all the ingredients in a blender, add 65ml cold water and blitz until frothy. Serve in a highball glass with some pineapple chunks as a garnish.
