Bee’s Knees

The Bee’s Knees is a very old cocktail. It is thought to originate in prohibition-era USA when the bitterness of home-made bathtub gin would have benefitted greatly from being knocked back with a bit of sweet honey. Classically, a Bee’s Knees is just gin, lemon and honey. However, in 1948, David Embury suggested the neat addition of orange juice to make “an interesting variation.”

Ingredients

  • 60ml dry gin
  • 15ml runny honey
  • 10ml orange juice
  • 25ml lemon juice

Instructions

Shake all the ingredients with ice and strain into a Martini glass.
