Invented in September 2014 by Simon Difford in his private Cabinet Room bar.
I can’t think of many cocktails that use cloves, but here it is very clever. The base of the drink is cloves, honey and sloes, which is all very wintery. Then the mixture is livened up by fruity pink Champagne. It’s brilliant.
- 1 dried clove
- 10ml honey water (3:1, honey:water)
- 15ml sloe gin
- 15ml fresh lemon juice
- Top with pink Champagne
Muddle the clove in a cocktail shaker. Add the next three ingredients and shake with ice.
Fine strain into a chilled Champagne flute and top with pink Champagne.
Garnish with seasonal berries.
