Mango Lassi

Lassi, (“लस्सी” in Hindi) meaning ‘buttermilk,’ is an Indian sub-continental drink made from yoghurt. It has been around since something like 1,000 BC and has been thought to have pseudoscientific, Ayurvedic healing properties on both the stomach and mind. In actual fact, yoghurt is quite good for settling the stomach, so there may be mileage in this. We have made Salted Lassi before, and this can be a little peculiar if you are not used to it. Far more palatable is a sweet mango version.

Ingredients

  • 135g Greek yoghurt
  • 70g mango or 70ml mango puree
  • 20ml simple syrup
  • Small pinch of fennel seeds
  • Couple of ice cubes

Instructions

Blitz all the ingredients in a blender, add 65ml cold water and blitz until frothy. Serve in a highball glass with small sprinkles of fennel seeds.
